Delicious Chicken, Spinach, and Lentil Coconut Curry



My mother in law shared this great recipe with us and now it's a new favorite meal to add to our rotation! It's a great way to get in many healthy nutrients; lentils, spinach, and sweet potato. Lentils are a good source of fiber, folate and magnesium, calcium, zinc, vitamin K, iron and protein. Sweet potatoes are high in B6, Vitamin C, Vitamin D, iron, Magnesuim, Potassium.

We pour this hearty soup over a bed of brown rice and serve it with Naan. Squeeze a little lime in each bowl, garnish with cilantro and sliced jalapeƱos. We also add a little siracha! If you enjoy Indian or Thai curry you will absolutely love this healthy recipe.
